Fit Tacos

Missing your taco night? Well here is a delicious alternative to traditional tacos when the cravings start to rumble.

Enjoy!

Serves 4

 Ingredients

1lb extra lean ground turkey breast
3/4 cup shredded reduced-fat Monterrey-jack cheese
seasoned salt (to taste)
pepper (to taste)
1/4 tsp cayenne powder
3/4 cup prepared salsa
1-2 fresh green chiles
3/4 cup sweet onion
1 head of lettuce (shredded)
3/4 cup tomatoes diced
8 whole wheat tortillas

Meat Mixture Recipe

Heat cooking spray in a large frying pan over medium-high heat. Add garlic, onion, and chiles. Cook for 2 minutes, stirring, until fragrant.  Add the turkey breast, salt, pepper and cayenne powder.  Cook the meat until almost brown.  Mix in the salsa and 1/2 cup of cheese, stirring until meat is brown and the cheese is melted.

Preparation

To assemble, fill each tortilla with (in any order):  3 tablespoons taco meat, 1/2 tablespoon cheese, 1/4 cup lettuce and 1 tablespoon tomato.

Pad Drills

For those of you who don't know, I am a third degree martial art instructor and self confirmed gym rat.  I always have people asking me about how I stay in such good shape after having four kids.  I always say it comes from a combination of martial arts, cardio drills, and weights.
Below is one of my pad drill workouts for all to see.  All you need are a set of hand pads, a partner and a pair of boxing/mixed martial arts gloves(optional).  If you don't have a partner you can do these drills with a bag or in the air.
The combinations I do are as followed:
I: Left foot forward sparring stance, lead with a left punch
II: Right foot forward sparring stance, lead with a right punch
III: Left foot forward sparring stance, lead with a left punch then follow with a right reverse punch
IV: Right foot forward sparring stance, lead with a right punch then follow with a left reverse punch
V: Left foot forward sparring stance, lead with a left punch then a right hook
VI: Right foot forward sparring stance, lead with a right punch then a left hook
*I do 2-3 minute drills for 10 rounds having a partner call out the numbers in rapid succession or listening to myself on tape.

I add ducking and kicking into these as well but we will get into that in another post.

I hope you enjoy this workout,
